Arguably the favourite cut of many in the First Light Venison team. Typically Venison is very lean and the Tri Tip is the only Venison cut that has a fat cap.
Similar to a beef tri tip, it's simple to cook. Score the fat side and start by cooking fat side down then sear the meat side. Best cooked medium-rare. Rest well, slice across the grain and serve hot!
